INGREDIENTS
1/2 head Red Cabbage, finely shredded
1 Medium White Onion, finely sliced
1–2 Carrots, shredded, matchsticks, or mandolin circles
1–2 Corn Cobs, kernels only
1/3 Head Cilantro
1 tsp Fresh Thyme (or 1/2 tsp Dried)
Juice 2 Limes
1/4–1/3 cup Aioli or Primal Kitchen Avocado Mayo
Salt and Pepper to Taste
PREPARATION
Combine onion, cabbage and carrot with some salt. Allow to sit for 5 minutes, then toss and gently massage with hands. Add all other ingredients to bowl and toss till well combined, taste for salt and pepper.
